We source this beautiful wood in India where there are over 20 species of Acacia.  The density and natural grains of each plank are uniquely dependent on the age of the tree and its geographical origins.  
We use a smoke chamber for our finishing process. Each piece of wood reacts differently which is why you will see a variance in finish.
